Tomorrow, Seward chef Kevin Lane will compete in the Great American Seafood Cook Off, after winning the Alaskan version last May. Held in New Orleans, the competition includes 15 national champions, and Lane said he’s going to try something new this time.
The winning dish in May was a representation of life on the Alaskan coast…
Lane: “Sourdough-crusted sablefish, that was caught here locally in Seward, a potato puree, smoked salmon jus, sauteed sea-beans and a tempura sea-bean and also a rhubarb sweet and sour sauce and a basil coulis.”
Lane said he’ll stick with fish, but won’t use anything that’s not completely fresh.
